| Why treat Celiac Disease (CD) with a gluten-free diet? |
| Celiac Disease (CD) is
a genetic disease of the small intestine occurring in children
as well as adults. Gluten, the protein
component of wheat, barley and rye damages the surface of the
small intestine resulting in malabsorption of nutrients, and
causing a toxic reaction in the individual. Removing gluten
from the diet is the only way to treat CD. This allows the
small intestine to heal, thus improving health. Strict adherence
to this gluten-free diet is a lifelong requirement, without
exception. Having a gluten-free diet does not mean you have

from autism. Research has found heightened levels of peptides
in the urine of autistic children, suggesting incomplete breakdown

| Are certain foods like guar gum, vinegar, canola oil and
oats okay for a gluten-free diet? |
| Guar gum and
canola oil are both okay for people on a gluten-free diet.
Vinegar, provided that it is not malt, is also gluten-free.
Oats themselves are gluten-free, however, the problem is the
way that they are milled, and as of yet, there are not effective
methods to prevent cross-contamination from other wheat grains
in the milling process. At Foods By George, all of the ingredients
we use are completely gluten-free and at our 100% gluten-free
facility, there is virtually no chance for cross-contamination. |
